There are so many things to love about fall. The slight chill in the air, shiny-new school supplies (well, maybe not quite so shiny at this point), the beauty of the changing seasons. All wonderful things about fall.

Let’s be honest though, shall we? The very best thing about fall, is the food. I know I’m not the only one in love with fall flavors! Apples, pumpkin, and the smell of warm, spiced goodness in the air. That’s the truly wonderful thing about fall.

Maple Pumpkin Steel Cut Oats - this warm, comforting oatmeal is the perfect fall breakfast!

Pumpkin recipes in the fall are one of life’s little pleasures. This pumpkin recipe is a keeper. I could eat it every morning all fall! I have already stocked up on pumpkin!

Let me tell you what I love about this recipe:

  • the pumpkin – it’s bursting with pumpkin flavor.
  • the steel-cut oats {affiliate link} – creamy, with just a little bite.
  • the maple syrup – I’m a huge maple syrup fan.
  • the cinnamon – it completes this delicious picture.

I just know you are going to love this simple, but tasty, recipe as much as I do!

Maple Pumpkin Steel Cut Oats - this warm, comforting oatmeal is the perfect fall breakfast!

Maple Pumpkin Steel Cut Oats
 
Celebrate the flavors of fall with this hearty, delicious breakfast!
Ingredients
  • ¼ cup maple syrup
  • ¾ cup pumpkin puree (not pumpkin pie filling)
  • 3½ cups water
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup oats
Instructions
  1. In a saucepan over medium heat, combine syrup, pumpkin, water, salt and cinnamon.
  2. Bring to a simmer.
  3. Stir in oats and continue to simmer, stirring occasionally, until tender. 25-30 minutes.
  4. Serve with a little extra maple syrup and a dash of cinnamon. A splash of milk or cream would be delicious.
Notes
This recipe refrigerates beautifully. I highly recommend doubling the batch.
